The IBM website has a new introductory article on getting a basic OLPC development environment working on PC. Using QEMU, an emulation environment that can boot many different operating systems, they show how to download QEM, the optional KQEMU accelerator package and the XO development image. Warning, if you are terminal shy or don't know linux, it gets a bit technical. The development environment isn't exactly like the G1G1 XO but it will allow you to test software and use the Sugar interface. QEMU is cross-platform. You should be able to install it on a Mac (PPC and x86) or PC.
